From paper-shell trees in the Anantnag belt, these kernels come out as pale butterfly halves — the grade bakers fight over. Low moisture and a slow shade-dry keep the oils from turning, so they stay sweet on the shelf far longer than supermarket walnuts. Each lot is light-sorted by hand; we reject anything amber or shrivelled before it reaches the pack.
