Mamra is the almond growers keep for themselves. Grown on rain-fed groves above 2,000m, the trees yield slowly — a single tree gives a fraction of what a commercial orchard does, but every kernel carries more oil and a denser, sweeter bite. We buy whole lots at the gate, cold-cure them over days rather than blasting them in a kiln, and hand-grade to a tight 28/30 calibre. The result splits cleanly, soaks soft overnight, and never carries the bitterness of a rushed cure.
