The Halman variety, dried whole on rooftops under Ladakh sun with the kernel left in. No sulphur, no glucose bath — which is why they read dark amber rather than neon orange. Chewy, honeyed and faintly tart, they keep their shape in tagines and bakes and make a clean snack on their own.
